As we all know, being a long-haul driver comes with some challenges—particularly when it comes to getting enough exercise and eating healthily. While we can’t tackle the whole problem in just one blog, I would like to share a quick tip on healthy eating while on the road: know what equipment you have available for your use. If you have an inverter in your cab, a whole world of possibilities just opened up for your meal planning.
Now, believe it or not, cooking in the cab doesn’t have to be limited to what can be done in a microwave. You simply have to be willing to get a little bit creative and plan ahead. For example, have you ever considered bringing a crockpot along as a traveling companion? If not, you should. Tell the dog to scooch over a bit and make some room. In fact, to get you started, I’ve raided mom’s recipe book for an easy one-pot Christmas dinner. As a bonus, it only uses 6 simple ingredients that you can easily find at a grocery store and take with you!
One-Pot Beef Roast
Ingredients:
- 1 – 1.5 lb beef roast
- 2 – 4 potatoes, washed and cut into pieces
- A handful of baby carrots
- 1 can cream of mushroom soup
- 1 packet dry onion soup
- 1 soup can full of water (check halfway through cooking, add water if needed)
Steps:
- Stir the onion soup mix and can of mushroom soup together in the crockpot. Fill soup can with water and add to mixture.
- Add beef roast, potatoes, and carrots. Gently stir so that everything is lightly coated in the soup mixture.
- Cook on high for 1 hour, then turn down to either medium heat for 3-4 hours or low for 6-8 hours. Don’t forget to check halfway through to make sure it has enough water.
That’s it! Simple. However, since you are in a vehicle; please, please, please, for the sake of your Christmas dinner and everything else that’s in your cab, please make sure the crock pot is securely strapped down if you plan to drive while it is busily cooking! You really don’t want cream of mushroom soup and beef roast drippings sloshing all over. The dog might think it’s a delicious treat, but I promise, that’s way more cleaning up than you’ll want to deal with. Just make sure the lid is sealed tightly and the pot is securely “buckled in” somewhere. We’ll both sleep better knowing it’s taken care of.
